BrightCider
6% ABV

BrightCider is made with a blend of Newtown Pippin heirloom apples and other Northwest varieties. The Newtown Pippin was the apple which defined the palate of new world ciders. Colonists found this apple so remarkable that Thomas Jefferson himself wrote from France during his travels “They have no apples here to compare with our Newtown Pippin.” The BrightCider is fermented cold to slow the fermentation process, retaining the aromatics of this heirloom fruit. The result is our tribute to American heritage cider with a modern Northwest twist.

This cider is built on a base of pink-fleshed Mountain Rose and Pink Pearl apples and fermented with a super clean white wine yeast. Muscat grape and honeysuckle aromas dominate, while lingonberry and raspberry sorbet notes flirt with your pallet. It’s a cider meant for the sunny days we all yearn for. Brewed with 100lbs of fresh Goschie and Westward Farm Strata hops per batch (we blended together 7 batches) that were nitrogen frozen and put directly into the packaging tank. Pale and Vienna malt offer a medium body and a clean white head.

Fresh Hop ReFresh Hazy IPA

A big aggressively hopped Hazy IPA, with golden color and loads of hop aroma and flavor, 100lbs of fresh harvested Comet hops from Crosby Hop Farms. Combined with high protein grains and some yeast leave this beer cloudy and even sometimes opaque.
